The Diversity of Milk

The great variety of flavors and fragrances found in the world's cheeses does not depend just on cheesemaking techniques. An important role is also played by the quality of the main ingredient: milk.

In other words, different milks produce different cheeses because each cheese develops characteristics based on the milk used to make it.

The flavor and quality of milk and dairy products depends primarily on three factors: the breed of the animal, whether sheep, cow, goat or other type of livestock; the place as well as farming methods and diet; and how the milk is processed.
