The richness of Russian food biodiversity on stage at Terra Madre Salone del Gusto

A large delegation of over 50 people from Russia is set to take part in Terra Madre Salone del Gusto in Turin, Italy from September 22 to 26, 2016
Organized by Slow Food, the region of Piedmont and the city of Turin, the 11th edition of Terra Madre Salone del Gusto, the most important international event dedicated to food culture, will be held from September 22 to 26, 2016, in Turin, Italy. 7,000 delegates from 143 countries, over 800 exhibitors and 300 Slow Food Presidia will take part in the event.
The International Market at the Valentino Park hosts a stand dedicated to showcasing traditional Russian products. Here below a list of several other occasions where visitors can taste flavors from Russia.
Dinner Dates and Cooking Schools
- Travelling Along the Trans-Siberian – A Cooking school held by the most famous chefs of Russian nouvelle cuisine, Sergey and Ivan Berezutskiy, from the restaurant Twins in Moscow.
- Two Faces of the Same Rouble – A Dinner date with Sergey and Ivan Berezutskiy inspired by the theme of duality: each dish highlights the similarities and differences between ingredients, in a philosophical vision of symbiosis.
- Nordic haute cuisine by Russian chef Igor Grishechkin – A dinner at the restaurant Sibiriaki in Turin held by Igor Grishechkin, chef of the Cococo restaurant in Saint Petersburg. The menu presents a selection of dishes that combine culinary traditions with modern technologies and seasonal products from local farmers.
Terra Madre Kitchen
Over 60 chefs from four continents prepare Terra Madre Salone del Gusto the most authentic versions of the original recipes from each country using products from their native lands with creativity and passion.
- Friday, September 23 from 10:00 to 11:00 – A tasting of the Russian traditional product – apple pastila – accompanied with the Belarus’ herbal tea produced by the Slow Food Presidium.
- Sunday, September 25 from 15:00 to 16:00 – Producers of the Pomorka salt, a product on the Ark of Taste, provide the visitors with the opportunity to try this unique salt, tasting its variety with wild berries like cloudberry, cranberry and others.
- Sunday, September 25 from 12:00 to 14:00 – For the first time Russian wine is presented at the Enoteca of Terra Madre Salone del Gusto, located in the courtyard of the Royal Palace. Here visitors can hear the story of how small wineries revive the autochthonous grapes of the Black sea region, tasting red wines from these local grapes.
- Monday, September 26 from 11:00 to 13:00 – Russian chef Roman Ialkovskii, from a family of Russian cooks with over 100-years-history, prepares a typical Russian dish, Kundyumy. This receipt was found mentioned in many historical sources, including the famous Russian “Domostroi” and in the menu of Russian Tsar’s Mikhail Romanov dinner in 1614.
Terra Madre Forums – Torino Esposizioni, Corso Massimo D’Azeglio, 55
Let’s not eat up our planet! – Victor Startsev from the Terra Madre Food Community of reindeer breeders of the Kola Peninsula talks about his experience with regards to climate change in the Forum.
Slow Fish – Terrace of the Società Canottieri Armida, Viale Virgilio 45 (Valentino Park)
Every day the Slow Fish network meets in this themed space to discuss the commons, of which the ocean and its life are an emblematic example. Representatives from two Russian Terra Madre Food Communities – the fishermen family Artel of Lovozero and the White Sea salt-makers are actively participating in the workshops.
Indigenous Terra Madre Network – Valentino Park
This themed space offers a daily program of panels and workshops in which representatives from Russian indigenous communities talk about their experiences in relation to land, food production, food sovereignty, gender, climate change, wellbeing and happiness.
- Andrei Dubovtcev, saami, talks about the example of saami community of Lovozero (Artic Circle) in two panels: Biodiversity, Resilience and Global Challenges: How the Indigenous Food Systems Can Inspire Positive Solutions (open to the public) and Tools and Good Practices for Strengthening Leadership (reserved for Indigenous Terra Madre Network delegates).
- Yusuf Bayramkulov, karachay shepherd, speaks in The Commons: Pastoralism and Nomadism – Custodianship of the Land – in Contrast with the Ownership System (open to the public).
- Grigory Kudryashov, tubulars, participates in Relationships with Local Governments: Examples of Good and Bad Practices (reserved only for Indigenous Terra Madre Network delegates).
- Zulfa Dzhatdo and Elena Kolesova take part in an informal meeting on Processing Indigenous Food: Sharing Ancient Culinary Knowledge. Zulfa Dzhatdo, karachay woman, leads us to discover the traditional cuisine of Balkars and Karachai. Elena Kolesova, an evenk woman, shares the experiences of indigenous peoples of Far East Russia as custodians of nature and a traditional food system.
