Time for an ambush!
Every little step counts. This was the essence of the message conveyed by Alice Waters, Jamie Oliver and Carlo Petrini in the conference Cooking to Spread Awareness moderated by Atlantic Monthly editor Corby Kummer. Sure, the projects that these four famous personalities undertook years ago have had a huge impact on changing both the food world and have significantly raised awareness of food issues among the general public, but given the scale of the task ahead into the future, it is up to each and every one of us to play our own role to continue on the global food movement initiated by these visionaries. We should never forget that the simple acts of cooking and eating are themselves acts of political change, especially when they follow the guiding principles of good, clean and fair, which were set forth in the Slow Food movement.
Celebrating Korean food culture
Korea is one of the 175 countries composing the Terra Madre delegation this year. It is not your ordinary country, as it hosted AsiO Gusto in October 2013, a version of Salone del Gusto and Terra Madre focused on Asia and Oceania, which gathered half a million visitors on its first edition. It is a unique country with a very rich and thriving food culture, which is on display within the Korean sections of Salone de Gusto these days. Yesterday, the spotlight was on Korean Buddhist Temple food. Introduced by representatives from Slow Food Korea and General Secretary of Slow Food International, Paolo di Croce, Buddhist temple monks, amongst which included famous chef Sunjae Sunim, prepared and served 20 different vegetarian traditional dishes.

Chef Sunjae Sunim will also host a Taste Workshop on fermented Jang sauce, a symbol of Korean cuisine, today at Salone del Gusto and Terra Madre.
Food waste: let’s be practical!
With a third of the food produced on the planet still being thrown away, food waste is high in the agenda of the event, which contains several conferences on the subject. One notable talk given today was by Tristram Stuart, who gave advice to the Slow Food Youth Network on how to improve the effectiveness of their own campaigns being conducted around the world, which was based on the successes of his campaign, Feeding the 5,000. More than just talk, Salone del Gusto and Terra Madre offer concrete techniques to avoid food waste through a packed program of lessons and workshops, such as events focused on cooking with leftovers. One such event included the Lombard Leftover Cooking workshop, which was held yesterday. It provided the audience with tools to make the best out of their leftovers: not recipes per se but a mindset rather, one made of pragmatism and creativity.

Dedicated to the world of food, Salone del Gusto is once more united into a single event with the international meeting of Terra Madre, the network of small-scale producers from around the world, which is now in its 10th year. Salone del Gusto and Terra Madre 2014 will be held from October 23-27 in Turin’s trade fair Centre Lingotto Fiere and see the presence of over 1000 exhibitors from 130 countries.
