Since its inception in 2005, Slow Food United Kingdom has rapidly expanded to over 40 convivia. Spanning the Scottish Highlands to Cornwall, this expanding membership helps preserve Britain’s extraordinary gastronomic heritage and agricultural biodiversity. The Ark of Taste was one of the first major projects for the Slow Food UK office, which identified products such as Jersey apples, Manx Loaghtan lambs and artisan Cheddar. In addition, a number of Presidia have been established to protect endangered foods like Gloucester cheese and Fal River oysters.
