Behind every place lie stories, gastronomic traditions, artisanal flavors and time-honored practices, preserved by women and men whose identities and cultures have been constructed over centuries. Every gastronomic tradition can become a unique tourism experience.
Slow Food Travel offers a new model for tourism, made up of meetings and exchanges with farmers, cheesemakers, herders, butchers, bakers and winegrowers who, along with the chefs who cook their products, will be the narrators of their local areas and unique guides to the local traditions.
Slow Food Travel offers local areas the chance to develop their potential as a quality gastronomic destination; they follow strict guidelines and the Slow Food philosophy while constructing alliances and experiences that add value to the best of local gastronomic heritage.
The aim is to bring travellers closer to the preservation of food biodiversity and an understanding of local cultures, identities and gastronomies. Journeys will often include visits to Slow Food Presidia, encounters with Ark of Taste products and stays with Terra Madre food communities.
Hospitality will be offered directly by the producers or by hoteliers and chefs who use local “good, clean and fair” ingredients in their kitchens.

Greater Caucasus Mountains region
The Greater Caucasus Mountain region lies along the ancient Silk Road, in the Caucasus range, where Europe and Asia meet. This region is a mix of mountains and plains. The highlands are cool and humid while the plains are warm and dry. Vastly covered by forests, the mountain are rich in mineral waters, which are used for treatment at resorts. Its pristine nature and remote mountain villages makes it the perfect destination for outdoor adventures.

Carinthia is the state of Austria where the Slow Food Travel model was first tested and implemented worldwide, leading to the development of the Slow Food Travel Alpe Adria destination in Geital and Lesachtal valleys.
Mittelkärnten region is located at the heart of Carinthia, where the Alps leave the step to gentle slopes, prosperous hills, and warm swimming lakes. A land rich in history and natural landscapes, perfect for hiking and biking while enjoying some of the best food experiences of Austria.

Situated to the northwest of the southern Austrian state of Carinthia, the Gailtal and Lesachtal Valleys are the first destinations in the world for Slow Food Travel.The southernmost of the Austrian states, Carinthia is famous for its lakes and ski resorts, its woods and its facilities for mountain sports, from trekking to mountain biking.
In the Gailtal and Lesachtal Valleys, it is possible to discover old flour mills and learn to bake bread with heirloom cereals, find out more about the production of raw milk cheese (the Ark of Taste Geiltaler Almkäse), beer and Gailtal speck, to get to know the world of mountain apiculture, and to cook traditional dishes with local chefs.
