Slow Canteens on Screen

Slow Food Coolporteur will explore good, clean and fair in the canteen this weekend with the screening of Plus de frais à moindre coût (More fresh food, less cost), produced by Slow Food France as part of their work to assist and inspire schools to improve their meal service. The film is just one of many activities happening this weekend in Gap, a mountain village in southwestern France, as part of the third edition of Savoirs et Saveurs de Montagne (Knowledge and Tastes of the Mountain) organized by this convivium.
Plus de frais à moindre coût takes viewers into the kitchens of two schools who have successfully introduced good, clean and fair practices, while still meeting budget and respecting all rules and regulations – a scenario often believed to be unachievable. At the centre of the story are two Terra Madre cooks, Andre Parra and Dominique Valadier, who have been instrumental to achieving these goals and will be present during the festival to meet with viewers, answer questions and exchange ideas.
The documentary is the first step in a series of actions planned for Haute Qualité Alimentare (high quality food), Slow Food France’s campaign for better food, with a focus on meals served in schools. The next move will be to release a series of practical tools to help communities turn ideas into concrete action: fact sheets and audiovisual materials on specific topics such as taste education and forming direct relationships with local producers.
In addition to the film screening, the festival will host an array of activities this weekend including a town market featuring produce from nearby alpine areas in France and Italy. Other activities include cooking demonstrations from both professionals chefs and great home cooks; taste workshops, lead by producers and experts to introduce the region’s best quality products; a discovery space for children, where young visitors can make pasta by hand, learn about organic farming and how milk becomes cheese; as well as round tables, debates and various other convivial and education activities.
