Corno alle Scale Char

Related to brown trout and Arctic char, this salmonid was imported from America at the end of the 19th century and has distinctively gaudy coloring: The fins are edged in white, the back is brown with yellow or olive-green streaks and the flanks are covered with yellow or red spots ringed with blue. Corno alle Scale is the name of a small nature reserve that bridges the Tuscan and Emilian Apennines. Inside the park is the small town of Lizzano in Belvedere, where a historic fish farm breeds the char. The fry are raised in spring water. Once they are at least 5 centimeters long, they are transferred to outdoor stone tanks, still fed with running spring water. Antibiotics and other drugs are never added to the water. The Presidium is working to promote the char in restaurants, and to establish an educational and fish-tasting center at the fish farm, which dates back to the early 20th century and is of great historic value.
