Slow Fish in Action
The Slow Food Bituriges Vivisques Bordeaux Convivium (France)
Encouraging a Short Distribution Chain
The direct sale of fish from producer to consumer is just beginning to take off in Europe, but promising developments are already being seen. In Bordeaux, in the southwest of France, the Slow Food Bituriges Vivisques Convivium is working to facilitate a short distribution chain in collaboration with Castelamap (an association protecting the small-scale agriculture of Castelnau-de-Médoc).
With a short distribution chain system, everyone benefits: The consumer has an opportunity to buy exceptionally fresh, high-quality fish, while the most important player in the chain, the person who actually caught the fish, sees the fruit of their work given proper economic value.
