Pescado sin Precio

The Slow Food Garraf Convivium and Terra Madre cooks from Catalonia, in northern Spain, organized two Slow Cook Jam Sessions in 2009, with the theme of  pescado sin precio (literally, “fish without price”).

Drawing on the vast range of fish offered by Barcelona’s Boqueria market, the cooks presented recipes that used little-known, sustainable fish instead of over-exploited species like tuna, swordfish and cod. A book on the subject, put together by chef Pep Noguè, will be published in 2010.

 

The chefs also got to work during Slow Food’s 2009 Algusto event in Bilbao, an international fair dedicated mainly to the food of the Iberian peninsula and Europe’s Atlantic coast. Algusto was held simultaneously with Terra Madre Spain; the gathering of food communities focused on four main themes, one of which was sustainable fishing.
