Slow Food Educates is... Food and Places! The Slow Food Educates... area at the entrance of Pavilion 5, proposes a series of interactive workshops for children and adults playfully exploring the relationship between food and places and the central role that co-producers (i.e. informed and aware consumers) can play through their daily choices. The workshops are run in collaboration with Laboratorio Creativo and NU–Arti in Gioco. Speak as you eat This area invites the participants to revive experiences related to food, to recognize its links to the place it comes from and learn more about virtuous practices through games, role plays and tasting sessions. At the end of the trail, participants will be given a guide with useful tips for everyday food shopping. From 3 pm to 5.30 pm every day the participants will meet the Terra Madre food communities to get to know the home regions of the producers and products from the Salone del Gusto and Terra Madre. Admission to the Speak as you eat area is free, but the participation in the meeting with the food communities requires advance booking. Food and Places workshop The area for children aged 7-13 years hosts a play-workshop which explores the worlds of bread, cheese, vegetables, honey and chocolate in a fun and playful way. Stories, team games, riddles and surprises are the stages of a journey to discover the relations between food and places. At the end of it the participants will be offered a delicious snack and a special booklet for them to take home. Master of Food Over the last ten years, Slow Food has organized more than 3,000 courses with 57,000 participants; 106,000 bottles uncorked, 1,560 liters of beer sampled and dozens of different kinds of cheeses tasted. Now it’s time for a new start with the revised Master of Food courses: The classic courses offer an introduction to taste education and are themed around wine, beer, oil, cheese, cured meats, sensory education and cooking techniques. Lessons on “good, clean and fair” help consumers learn more about their everyday shopping and cover grains and bread, pasta and rice, meat, fish, honey, fruit and vegetables, shopping and produce shopping. One thing leads to another with themed evenings that inspire a desire to find out more about spirits, vinegars, coffee, tea, chocolate, spices, herbs, mushrooms and truffles, patisserie, ethnic cuisines and gastronomic history and culture. The Conferences at Salone del Gusto From projects to protect agricultural biodiversity to the latest threats for the fragile African production system, from the relationship between food waste and world hunger to new keys to understanding contemporary food, financial and energy crises. The 23 conferences of Salone del Gusto 2010 offer a full exploration of the “food +/= places” theme, looking at the many aspects of the relationship between what we eat and where it was made. These are the speakers who have already confirmed their participation (more to follow): - Stefano Rodotà – Professor of Civil Right at La Sapienza University of Rome. Specializing in individual rights and fundamental liberties, involved in the analysis of issues related to information technology and biomedical innovations. President of the Italian Guarantor Authority for Privacy from 1997 to 2005. - Stefano Zamagni – Ordinary professor of Political Economics at the University of Bologna and Adjunct Professor of International Political Economy at the Johns Hopkins University, Bologna Center. He is president of the Agency for the Italian Non-profit Social Associations (Onlus). Plays a central role in the contemporary Italian and international economic debate. - Franco Cassano – Professor of Sociology at the University of Bari. Scholar on common goods and active citizenship. Among his most significant works: Tre modi di vedere il Sud e Il pensiero meridiano (Three ways of looking at the South and The Southern European Thought). - Vandana Shiva – Indian activist, scientist, vice president of Slow Food and president of the International Commission for the Future of Food and Agriculture. She founded Navdanya in 1991, a movement in defence of biodiversity and native agriculture. Has been awarded with the Right Livelihood Award, the alternative Nobel prize for peace, in Stockholm in 1993. - Andrea Segré – Dean of the Faculty of Agriculture studies of the University of Bologna and president of the Academic Last Minute Market Spin-Off. In the last years he has concentrated his analysis and studies on resources waste in both developed and developing countries. - Daniele Scaglione – Campaign director at Action Aid, the international organization committed to fighting poverty. - Antonio Onorati – President of the International Center Crocevia. He is one of the promoters of the regional law on local agricultural biodiversity. - Gary Paul Nabhan – Professor of Geography and researcher in social sciences at the University of Arizona, he is specialized in ethno-biology. Has explored themes such as the conservation of native food and cultures in the Mexican border areas. - Marcello Buiatti – Professor of Genetics at the University of Florence and President of the Foundation for a Sustainable Tuscany. As an Italian delegate to the European Community he has directed a number of scientific programs and projects and has been involved in many international activities related to bioethics and epistemology. - Serge Latouche – Professor emeritus of Economic Sciences at the University Paris-Sud. He is a specialist of economic and cultural North-South relations and of epistemology in the social sciences. He is a supporter of convivial de-growth and localism. - Wolfgang Sachs – Sociologist and economist, he is researcher at the Wuppertal Institut for Climate, Environment and Energy. He mainly deals with issues related to development and sustainability. The conferences are free and open to all Salone del Gusto visitors until full.
