Slow Food Presents Slow Fish

The program for Slow Fish, the first sustainable seafood salone, was presented on Tuesday, March 16 in the Auditorium of the Aquarium in Genoa, Italy. Organized by Slow Food, this is the first international event to be entirely dedicated to the world of seafood and the issues that surround it today.
Genoa will host the event—comparable to a small scale Salone del Gusto with a focus on seafood—June 4-7, 2004. Slow Fish is part of a larger event, Sapore del Mare, organized by the Italian Ministry of Agriculture and Forestry and the Liguria Regional Authority, which will take place at the Fiera di Genova exhibition center.
After opening remarks by the President of Fiera di Genova spa, Franco Gattorno, who also spoke on behalf of the Mayor of Genoa and the President of the Liguria Regional Authority. Slow Food International President Carlo Petrini then explained how the first edition of Slow Fish would be a gastronomic fair dedicated to sustainable fishing, as well as an occasion to reflect on the problems involved in safeguarding the marine environment.
“Let’s not forget that gastronomy results from the noble processing of raw ingredients. It is in the kitchen that the pleasures of the table are created, and it is through the pursuit of pleasure that consumers can be directed to take good decisions,” said Carlo Petrini. “The rediscovery of recipes that use less well known fish, proper information and a fully-fledged consumer education campaign could reverse market trends. It is man who produces andprocesses food, and we have to return to a human dimension, if we are to save the balance of the environment that surrounds us.”
After this first special edition, as of 2005 Slow Fish will become a biennial event.
